Low Carb Pizza Casserole
16oz Ground Turkey Sausage
2oz Turkey Pepperoni
1 Cup Cauliflower or Cauliflower Florets
1 ea Green Bell Pepper
4oz Crimini or Button Mushrooms
1 Cup Jarred Marinara Sauce (I prefer Rao’s Homemade brand)
¾ Cup Fat Free Shredded Mozzarella
¼ Cup Parmesan Cheese
1 Tbsp Italian Seasoning
½ Tbsp Olive Oil
TT Salt and Pepper, to taste
- Preheat oven to 400 degrees, then begin by roughly chopping the Cauliflower into smaller, bite-sized pieces. Place the chopped Cauliflower into a microwave safe bowl with 1 Cup of water, then cover with a damp paper towel and microwave for 3 minutes, or until Cauliflower is tender. Drain the Cauliflower, and allow to dry in a strainer while you continue the next step.
- Cook the Turkey Sausage in a large saute pan over medium-high heat for about 10 minutes, or until evenly browned. Place the Cauliflower into a large bowl, drain the Turley Sausage in the strainer to get rid of excess fat, then set aside and save the pan for the next step.
- Thinly slice the Mushrooms and dice the Green Bell Pepper into ½ inch pieces. Heat the saute pan over medium-high heat, then add ½ Tbsp Olive Oil. Add the Mushrooms and Peppers to the pan and cook for 8-10 minutes to remove any excess water. Remove the pan from the heat and set aside.
- Prepare a square baking dish by lightly coating it with a bit of Olive Oil or Pan Spray, then spread 1/3 Cup of Marinara Sauce on the bottom.
- Grab the bowl of Cauliflower, then add the Turkey Sausage, Mushrooms, and Peppers and toss together until evenly mixed.
- Spread half of the mixture onto the baking dish, then top with 1/3 Cup of Marinara, followed by half of the Pepperonis and half of the Mozzarella Cheese. Repeat the layering steps with the remaining ingredients in order of Veggie Mix, Pepperonis, Marinara, then Mozzarella. If you’d like, you can save a few Pepperonis for the top of the dish.
- In a small bowl, mix together the Parmesan Cheese and Italian Seasoning and sprinkle over the top of the whole dish. Add a few Pepperonis to the top, if you are going for the classic pizza presentation.
- Place the dish into the preheated oven and bake for 30 minutes, or until the casserole is warm in the middle and the cheese is melty.
- Remove from the oven and allow to cool for about 5 minutes, then find some people to share the dish with or save some for leftovers!
